The Chimay Red Cap, or "Première", is the oldest of the Chimays. This Trappist beer possesses a beautiful coppery colour that makes it particularly attractive. Topped with a creamy head, it gives off a slight fruity apricot smell from the fermentation. The aroma felt in the mouth is a balance confirming the fruit nuances revealed to the sense of smell. This traditional Belgian beer is best savoured at cellar temperature (10 - 12°C).

The Chimay Blue Cap is a dark Trappist beer with a powerful aroma, the complex flavour of which improves across the years. It was first brewed as a Christmas beer, explaining the presence of a "vintage".

Brewed from very similar ingredients as the Premiere but paler and spiced with coriander. It was intended only to be consumed by the abbey monks or at the nearby inn Auberge de Poteaupre, which is associated with the abbey.
This beer with its typical golden color, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavor, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised. 8% ABV
The unique triple fermentation process starts during the brewing process, then in the wood cask, and lastly in the bottle. For this specific batch, rhum-aged barrels were used to create the third round of Chimay Grande Réserve Barrel Aged Rhum Edition. This edition from February 2017 boasts an excellent blend of characters of Chimay Grande Réserve and Rum.
Chimay 150 is a strong, blond beer that is refreshing and fruity, tasty and intense. Its mint, bergamot, lime and eucalyptus aromas will take you on a surprising journey. Its delicate hints of rosemary and clove go perfectly with the subtle floral notes, enhanced by a touch of invigorating ginger. Its mellow, rounded body and smoky, spicy flavour are typical of Chimay beers, and will leave you with an exquisitely sophisticated aftertaste.

Best enjoyed in its distinctive Trappist chalice, this is without doubt a Trappist beer of great tradition. The Cistercian Trappist monks of Chimay have been brewing since 1862, with their abbey being located on the site of a well which provides pure water for the beer.
