Pecorino is a rare grape variety, named after the sheep that the bunch of grapes is supposed to resemble. The wine was aged in large Austrian oak casks. Fine, floral and ripe citrus fruit character on the palate, it has excellent length.

Valentino Sciotti is involved with a number of wineries in Puglia, Campania (he is the man behind Vesevo) and his native Abruzzi. The Gran Sasso wines are made by winemakers Francesco De Santis and young winemaker Rino Santeusanio and display a freshness and directness of fruit that sets them apart from other wines from this area.

The grapes were hand harvested in mid-September. 30% of the wine was fermented at low temperatures in lightly toasted Austrian oak casks with a capacity of 4,000 litres with internal temperature control. The rest was fermented in stainless steel at low temperatures of 14-15°C. The wine was then matured for six months in stainless steel and two months in oak to maintain the fresh character of the Pecorino grape but also enhance its complexity and depth.
