From the oldest vines in the Joseph Mellot estate planted on the pebbly clay limestone soils or ‘caillottes’. This prestige cuvée is fermented and aged around 20 months in oak in the historic cellars of Sancerre. Complex and intense. Aromas of acacia, mango and coconut complement a great structure and generous finish.
The grapes are pressed very slowly and the juice is cold settled. The wine was fermented and aged in oak barrels (30% new oak) in Joseph Mellot's ancient cellars in the heart of Sancerre. Fermentation lasts 2 to 7 months and the wine is aged for 20 months. Barrel ageing adds a new dimension to the wine's structure giving vanilla flavours and good ageing potential.
