For the winemaking process, steel fermenters are used. The Montepulciano grapes to produce the Cerasuolo d'Abruzzo wine are harvested in advance of those to vinify the reds and a cold maceration is carried out until the desired characteristics are achieved. The goal of cold maceration is to extract the aromas of the grape. This is followed by a refinement and stabilization of the must in steel, always with the temperature control which is kept below 20 degrees. Sulfur dioxide is used at minimum dosages.
